A REMINDER | FOOD ALLERGIES
A few nights ago, my youngest son woke up crying and scratching repeatedly only an hour or so after his bedtime. I checked him out, didn’t see any welts and rocked him back to sleep. He woke up again, and again and yet again, where I finally plopped him in our bed trying to soothe him. At around 2 o’clock in the morning I turned on our lights, and checked him thoroughly for a rash or some sign of allergic reaction. He had a prickly rash down his back. Of... Read The Rest →
MEALTIME WITH MY TWO YEAR OLD
What a messy age of eating! But sort of enjoyable the third time around. Here are a few of our lunch time meal items. I usually pick three: (food allergy friendly of course!) a turkey burger, rice pasta with daiya cheese, lentil soup, rice & beans, avocado rice noodles, peas, broccoli, applesauce, banana or pear slices, roasted turkey and vegetables, potato wedges, sauteed spinach, baked sweet potato, sometimes allergy-free pancakes! and a glass of coconut milk. CHOCOLATE MOUSSE PIE
CHOCOLATE MOUSSE PIE Gluten Free, Vegan, Soy free I really was craving chocolate. To be honest, my “chocolate dessert” over the last 2 years of being on this allergy free diet has consisted of either a brownie or a handful of dairy free chocolate chips. I have been missing the other types of chocolate dessert. Enter my husband- he loves chocolate mousse. He suggested we find something in the pudding or mousse category to whip up. So I scoured the internet looking for a recipe that was vegan, gluten... Read The Rest →
FARM TO TABLE | DINNER
OUR FARM TO TABLE BIRTHDAY DINNER MENU Brie with Apricot & Orange Jam en Croute I have been dairy and gluten free for a few years, but I do recall this simple way of serving brie as being a favorite. I topped a wheel of brie with Bonnie’s Jam in Apricot & Orange inside rolled out puff pastry. I wrapped up the ends, then baked for around 40 minutes at 375 degrees. Place baked brie atop parchment paper, on your favorite serving dish. I cut into the brie, added crackers... Read The Rest →

LABOR DAY WEEKEND | FOOD ALLERGY FRIENDLY STRAWBERRY PANCAKES
We spent this last holiday weekend in a state of laziness, including a return to bed for both my husband and I after breakfast, for reading and relaxing. It felt great because we have a busy fall schedule up ahead. We had big breakfasts at a leisurely pace and at a leisurely time. We played board games with the boys and watched the Lorax as a family (loved the movie). The weather was wet, so we stayed indoors mostly. We had a nice dinner with family on Sunday. I spent... OUR FOOD ALLERGY STORY | PART TWO
Read OUR FOOD ALLERGY STORY | PART ONEPart Two: After our third son was born in November of 2010, we started to notice a head to toe rash that was all too familiar, developing when he was 2 months old. For the 8 weeks prior his skin was flawless (photograph above) and he was sleeping well at night. I knew in the back of my mind that food allergies could be the cause, obviously, but I was hoping it wasn’t. My allergist in Chicago suggested to wait a few... Read The Rest →
